Mediterranean Baked Chicken

Lean chicken breasts are a good source of high-quality protein. Cherry tomatoes provide vitamins and antioxidants, while Kalamata olives add a burst of flavor and heart-healthy fats. Red onions and garlic offer potential immune-boosting properties. Fresh herbs, lemon juice, olive oil, salt, and pepper create a delightful marinade for a flavorful and nourishing baked chicken dish.

Ingredients:

- 4 chicken breasts

- 1 cup cherry tomatoes

- 1/2 cup Kalamata olives, pitted

- 1/2 red onion, sliced

- 4 cloves garlic, minced

- 2 tablespoons fresh herbs (such as oregano or thyme), chopped

- Juice of 1 lemon

- 3 tablespoons extra-virgin olive oil

- Sea salt, to taste

- Black pepper, to taste

Instructions:

1. Preheat your oven to 400°F (200°C). Grease a baking dish with olive oil or cooking spray.

2. Place the chicken breasts in the greased baking dish. Season them with sea salt and black pepper to taste.

3. In a separate bowl, combine the cherry tomatoes, Kalamata olives, sliced red onion, minced garlic, and fresh herbs. Toss them together.

4. Pour the lemon juice and extra-virgin olive oil over the tomato and olive mixture. Stir well to combine.

5. Spoon the tomato and olive mixture over the chicken breasts in the baking dish, spreading it evenly.

6. Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes.

7. After 25-30 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the chicken is cooked through and the tomatoes have softened.

8. Remove the baking dish from the oven and let the chicken rest for a few minutes before serving.

9. Serve the Mediterranean Baked Chicken with the flavorful tomato, olive, and onion mixture on top. You can garnish with some additional fresh herbs if desired.

This Mediterranean Baked Chicken is packed with vibrant flavors and juicy textures. It pairs well with a side of roasted vegetables, couscous, or a fresh salad. Enjoy this delicious and wholesome dish!
