Zucchini Noodles with Pesto and Cherry Tomatoes
Zucchini noodles are a low-carb alternative to traditional pasta, reducing calorie intake. Basil pesto adds flavor and healthy fats from olive oil and pine nuts, while cherry tomatoes offer antioxidants and freshness.
Ingredients:
- 3 medium-sized zucchini
- 1 cup cherry tomatoes, halved
- 1/4 cup pine nuts
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/3 cup extra-virgin olive oil
- Juice of 1/2 lemon
- Salt and pepper to taste
Instructions:
1. Start by preparing the zucchini noodles. Use a spiralizer or a vegetable peeler to create long, thin strips of zucchini resembling noodles. Set aside.
2. In a dry skillet over medium heat, toast the pine nuts until lightly golden, stirring frequently. Remove from heat and set aside.
3. In a food processor or blender, combine the fresh basil leaves, grated Parmesan cheese, minced garlic, and toasted pine nuts. Pulse until the mixture forms a coarse paste.
4. While the food processor is running, slowly drizzle in the extra-virgin olive oil until the pesto is well combined. Add the lemon juice and season with salt and pepper. Blend again until smooth. Set aside.
5. In a large non-stick skillet, heat a drizzle of olive oil over medium heat. Add the cherry tomatoes and sauté for a few minutes until they start to soften.
6. Add the zucchini noodles to the skillet with the cherry tomatoes. Toss gently and cook for 2-3 minutes until the zucchini noodles are just tender. Be careful not to overcook them, as they can become soggy.
7. Remove the skillet from heat and add the prepared pesto sauce. Toss the zucchini noodles and cherry tomatoes until they are evenly coated with the pesto.
8. Taste and adjust the seasoning with salt and pepper if needed.
9. Serve the zucchini noodles with pesto and cherry tomatoes immediately, garnished with additional Parmesan cheese and fresh basil leaves if desired.
This recipe offers a light and flavorful alternative to traditional pasta. The zucchini noodles provide a low-carb base, while the homemade pesto adds a burst of fresh herb flavor. The cherry tomatoes add a touch of sweetness, creating a delicious and nutritious dish that can be enjoyed as a main course or a side dish.
