Mediterranean Stuffed Bell Peppers

Ingredients:

- 4 bell peppers (any color)

- 1 cup quinoa

- 1 pound lean ground turkey or chicken

- 1 cup tomatoes, diced

- 1/2 cup onion, diced

- 2 cloves garlic, minced

- 1/2 cup crumbled feta cheese

- 2 tablespoons olive oil

- 1 teaspoon dried oregano

- 1/2 teaspoon dried basil

- Salt and pepper to taste

Instructions:

1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.

2. Cut off the tops of the bell peppers and remove the seeds and membranes from the inside. Rinse the bell peppers and set them aside.

3. Cook quinoa according to package instructions and set aside.

4. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic and sauté for about 2-3 minutes until fragrant.

5. Add the ground turkey or chicken to the skillet and cook until it's browned and cooked through, breaking it up into smaller pieces with a spoon.

6. Add the diced tomatoes, dried oregano, dried basil, salt, and pepper to the skillet. Stir well to combine and let the mixture simmer for a few minutes.

7. Remove the skillet from heat and stir in the cooked quinoa and crumbled feta cheese. Taste and adjust the seasoning if needed.

8. Stuff the bell peppers with the turkey or chicken mixture, packing it tightly. Place the stuffed bell peppers in the greased baking dish.

9. Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes.

10. After 30 minutes, remove the foil and continue baking for an additional 10-15 minutes until the bell peppers are tender and the tops are slightly browned.

11. Remove the stuffed bell peppers from the oven and let them cool for a few minutes before serving.
