- Juice of 1 lemon

- 3 tablespoons extra-virgin olive oil

Instructions:

1. Preheat your oven to 400°F (200°C). Grease a baking dish with olive oil or cooking spray.

2. Place the chicken breasts in the greased baking dish. Season them with sea salt and black pepper to taste.

3. In a separate bowl, combine the cherry tomatoes, Kalamata olives, sliced red onion, minced garlic, and fresh herbs. Toss them together.
