Mediterranean Quinoa Salad

This vibrant salad combines the goodness of quinoa, a protein-packed grain, with hydrating cucumbers and antioxidant-rich tomatoes. The red onions add a punch of flavor while supporting healthy digestion. Olives and feta cheese provide healthy fats, while parsley adds a refreshing burst of nutrients. Ingredients:

- 1 cup quinoa

- 1 and 1/2 cups water

- 1 cup cherry tomatoes, halved

- 1 cucumber, diced

- 1/2 red onion, thinly sliced

- 1/2 cup olives, pitted and halved

- 1/2 cup crumbled feta cheese

- 1/4 cup fresh parsley, chopped

- Juice of 1 lemon

- 3 tablespoons extra-virgin olive oil

- Salt and pepper to taste

Instructions:

1. Rinse the quinoa thoroughly under cold water using a fine-mesh sieve to remove any bitter residue.

2. In a medium-sized saucepan, bring the water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce the heat to low, cover the saucepan, and simmer for about 15 minutes or until all the water is absorbed and the quinoa is tender. Remove from heat and let it cool.

3. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

4. In a small bowl, whisk together the lemon juice, extra-virgin olive oil, salt, and pepper.

5. Pour the dressing over the quinoa mixture and toss gently to combine, ensuring all the ingredients are well coated.

6. Taste and adjust the seasoning if needed. You can add more lemon juice, olive oil, salt, or pepper according to your preference.
