Ingredients:

  • Assorted vegetables (such as bell peppers, zucchini, eggplant, and cherry tomatoes)

  • 1/4 cup extra-virgin olive oil

  • Sea salt, to taste

  • Black pepper, to taste

Instructions:

  1. Prepare the vegetables by washing them thoroughly. Cut the bell peppers, zucchini, and eggplant into bite-sized pieces. Keep the cherry tomatoes whole.

  2. In a large bowl, whisk together the lemon juice, minced garlic, chopped fresh herbs, extra-virgin olive oil, sea salt, and black pepper to make the marinade.
